Smoked Garlic Crab

4 cleaned, cooked, cracked Dungeness
-- Crabs
6 tablespoons butter
6 tablespoons olive oil
2 (or more) tablespoons minced garlic
3 tablespoons lemon juice
1/4 cup finely chopped parsley
salt and pepper to taste

Methods/steps

Soak 2 handfuls of wood chips in water. (I used mesquite, it's light flavor was an excellent counterpoint to the light sweetness of dungeness crab.) Light a small pile of charcoal briquets in the firebox of your smoker, or start an indirect fire in your grill, by dividing the coal into 2 piles. (You will put the crab over the empty area between the 2 piles)

Once the fire is ready, throw on a handful of the wood chips. Dump the crabs onto your grill pan and put on the grill. Once the smoke has died down (about 10 mins), throw on the other handful.

While the crab are smoking, preheat the oven to 500 degrees.

When the wood chips have burned off, heat the butter, olive oil and garlic in a very large, ovenproof saute pan over medium high heat until hot. Don't burn the garlic! You just want the butter to melt and the mixture to get hot. Dump in the crabs, salt and pepper to taste, and toss well. Transfer to oven, toss once halfway through. Pour the contents of the pan into a large serving bowl, sprinkle with lemon juice and parsley, and toss well. Put out a bowl for the shells, serve with crusty bread,a fresh salad, and lots of napkins. Excellent with Thai Coconut Soup, and beer or white wine. The smokiness of the crab shells is amazing as you suck out the sweet meat.
