Grilled Greek Salmon Salad

Ingredients

Greek dressing:
1/2 tbsp Olive Oil
1/2 tbsp Regina Red Wine Vinegar

4 1/2 cups Spring Mix Lettuce
1 oz Candy Coated Pecans
1/2 oz Feta Cheese
4 oz Grilled Salmon
1/2 oz Grilled Onions (plain)

Methods/steps

Greek dressing: mix

Place spring lettuce in a bowl
Add candied pecans
Add crumbled feta cheese
Grill Salmon fillet side down for 5 minutes
Add thin rings of red onion to grill
Flip salmon and grill skin side down 5 minutes
Using spatula, slip salmon off the grill separating it from the skin
Cut salmon fillet in half and stack on top of salad
Remove grilled red onion and place on top of grilled salmon
Drizzle Greek dressing over salad and serve hot
