Crunchy Salmon Salad
1/3 cup mayonnaise
1 dash salt and pepper
4 tablespoons lemon juice
1 teaspoon grated onion
1 1/2 cup drained flaked salmon, canned or cooked
1/3 cup diced celery
2 1/2 tablespoons diced sweet pickles
4 ounces potato chips
Combine mayonnaise, salt, pepper, lemon juice and grated onion in a bowl.
Fold in flaked salmon, pickles and celery. Chill thoroughly.
Just before serving, fold in crushed potato chips and serve on lettuce or other salad greens. Tuna fish may be substituted for salmon.
